Stuffed French Toast

Holy cow is this good. This may be a breakfast that you take a nap after. Two slices of sweet, warm French toast filled with sweetened cream cheese, fruit, and/or chocolate hazelnut spread and sprinkled with a little extra powdered sugar. Talk about dessert for breakfast!

  • Stand Mixer (Optional), But Helpful for the Cream Cheese

Ingredients
  

  • 8 Slices Texas Toast or Brioche Sliced Thick; Slightly Stale or Dry is Best
  • 4 Tbsp Unsalted Butter
  • 1 Egg
  • 1/2 C Milk
  • 1/2 tsp Cinnamon
  • 1/2 tsp White Sugar
  • 1 Heavy Pinch Salt
  • For The Cream Cheese Filling
  • 4 Oz. Cream Cheese Softened
  • 3 Tbsp Powdered Sugar Plus More for Topping
  • 1 tsp Vanilla Extract
  • For The Second Filling
  • 1/2 C Of:
  • Diced Fresh Strawberries, Blueberries, bananas and/or Raspberries
  • Chocolate Hazelnut Spread
  • Strawberry, Peach, Blackberry or Apricot Preserves
  • More Sweetened Cream Cheese (From Above)

Instructions
 

  • Mix the cream cheese, powdered sugar and vanilla into a spread. I usually use a fork, but a stand mixer might be helpful here.
    3 Tbsp Powdered Sugar, 1 tsp Vanilla Extract, 4 Oz. Cream Cheese
  • Spread the cream cheese mixture evenly on one side of each bread slice, being sure to use it all.
    8 Slices Texas Toast or Brioche
  • Add 2 Tbsp of the second filling to four slices of bread. Spread it evenly over the top of the cream cheese.
    Diced Fresh Strawberries, Blueberries, bananas and/or Raspberries, Chocolate Hazelnut Spread
  • Place a slice of bread with only cream cheese onto each slice with the second filling, cream cheese side down, forming a sandwich. Press lightly to help seal the fillings inside.
  • Melt the butter in a skillet over medium to medium-high heat.
    4 Tbsp Unsalted Butter
  • In a wide bowl, mix the egg, milk, white sugar, salt and cinnamon. Dip the French toast sandwiches into the mixture. Make sure you dip both sides of each sandwich and soak up as much of the egg mixture as possible.
    1 Egg, 1/2 C Milk, 1/2 tsp Cinnamon, 1/2 tsp White Sugar, 1 Heavy Pinch Salt
  • Cook the sandwiches in the skillet, flipping once, until cooked through and golden brown. About 2 minutes each side.
  • Serve right away topped with extra powdered sugar. They are great with added syrup, cinnamon, honey, fresh fruit, whipped cream and/or chopped nuts.

Notes

A note about the bread: stale bread works best because it soaks up more of the egg mixture. If you only have fresh bread, try leaving it exposed to the air overnight or lightly toasting it. 
The sky is the limit on which fillings you add to this dish. Try subbing chocolate hazelnut spread for the cream cheese. It is unbelievably good. Basically dessert.
Pretty much anything that sounds good in cheesecake would go well stuffed into French toast.
