Pizzadillas

It's a pizza! It's a quesadilla! It's cheesy, saucy and easy! Whip these up as a snack, or a full meal, when you want something quick and cheap. Or when it's too late to order a pizza.

Ingredients
  

  • 6 Flour Tortillas
  • 1/2 C Marinara Sauce Warmed
  • 3/4 C Mozzarella Cheese Grated
  • 3/4 C Pepperoni Or other fillings; See notes for ideas
  • 1/2 C Extra Marinara Sauce (Optional) for dipping
  • 1/2 C Ranch (Optional) for dipping
  • Salt and Pepper to Taste

Instructions
 

  • Heat a skillet on your stovetop at medium-high heat.
  • Lay out your tortillas and spread evenly with marinara sauce.
    6 Flour Tortillas, 1/2 C Marinara Sauce
  • Sprinkle a layer of cheese over each tortilla.
    3/4 C Mozzarella Cheese
  • (Optional) chop the pepperoni and any other toppings you choose to include. Spread the pepperoni/toppings over the cheese and spinkle on salt and pepper to taste.
    3/4 C Pepperoni, Salt and Pepper to Taste
  • Fold each tortilla in half to make a half moon shape.
  • Cook each pizzadilla in your skillet for two or three minutes on each side, until the tortilla is golden and the cheese is melted.
  • Let cool a couple minutes to give the cheese a little time to set. Serve with the (optional) ranch and extra marinara sauce.
    1/2 C Extra Marinara Sauce, 1/2 C Ranch

Notes

The amount of cheese and toppings in this recipe is for six really stuffed pizzadillas. You can reduce the cheese/toppings, or spread them over more tortillas, if you want less in each pizzadilla.
You can also sub monterrey jack or another melty cheese for the mozzarella, and enchilada sauce for the marinara sauce, to make it more Mexican. Any extra spices add a nice layer of flavor. Try adding garlic powder, onion powder, crushed red pepper, basil and/or oregano. 
You can really make these things your own, but below are a few topping combos to get your creative juices flowing:
  • Caprese
    • Extra mozzarella
    • Sliced tomato
    • Basil
    • Parmesan
  • Fajita
    • Monterrey jack cheese
    • Salsa, picante sauce or enchilada sauce
    • Cooked beef or chicken
    • Diced onions and peppers (try them sautéed for extra flavor)
    • A sprinkle of cumin or chili powder if you have it

    • Mozzarella
    • Marinara
    • Any toppings you can find in the fridge/pantry
      • Olives
      • Mushrooms
      • Cooked Sausage
      • Ham
      • Peppers
