Garlic Soy Buttered Noodles
Equipment
- Normal Kitchen Utensils
Ingredients
- 1 lb Linguine, Spaghetti, Bowtie Pasta Or Your Favorite Pasta
- 1 Stick Butter
- 12-16 Cloves Garlic Minced
- 4 Tbsp Soy Sauce
- 4 Green Onions
- Really Great Topping Options:
- Rice Vinegar
- Chili Crisp
- Sriracha
- Ponzu Sauce In Place of Soy Sauce
Instructions
- Boil your pasta according to package directions.1 lb Linguine, Spaghetti, Bowtie Pasta
- While the pasta boils, mince your garlic and thinly slice your green onions. For the green onions, set aside the greenest parts for garnish. Slice and save the whites and light green parts for the pasta.12-16 Cloves Garlic, 4 Green Onions
- Once the pasta has boiled, save two cups of the pasta water and strain the pasta.
- Back in the same pot you boiled the pasta in, set the heat to medium high and add the stick of butter. Once the butter has melted, add the garlic and green onion whites and light greens. Cook for 1-2 minutes until the garlic softens and becomes fragrant.1 Stick Butter
- Mix the soy sauce in with the butter and add the pasta back into the pot.4 Tbsp Soy Sauce
- Add in 1/2 cup of the pasta water and stir to combine (tongs work great here). Once combined, add a second 1/2 cup of the pasta water and again stir to combine.
- This is generally where I stop. The pasta water and butter should form a sauce to coat the pasta. If it hasn't, if the pasta still looks a little dry, you can continue to add from the remaining pasta water a little at a time until a sauce begins to form. If the pasta looks a little too thin or watery, simply continue to cook and stir until the sauce thickens.
- Taste the pasta and add more soy sauce if needed.
- Serve the pasta right away topped with the reserved green onions and your favorite toppings.Rice Vinegar, Chili Crisp, Sriracha, Ponzu Sauce

Garlic Soy Buttered Noodles: A Simple Twist on a Childhood Classic
If you grew up loving buttered noodles, this Garlic Soy Buttered Noodles recipe will take you on a nostalgic journey with a delicious Asian twist. It’s everything you loved as a kid—simple, buttery pasta—but upgraded with the savory punch of soy sauce and loads of fresh garlic. This recipe is a perfect balance of comfort food and bold flavors, and the best part? It’s totally customizable!
Picky Girlfriend Approved
I originally whipped up this noodle dish as a random experiment one night, not thinking much of it. And it’s always a toss up whether my concoctions can win my girlfriend over. But she could not stop eating this! The next day, she told her family all about it, saying it was “SO good”—about the highest praise she can give!
Try the Toppings
The beauty of this dish lies first in its simplicity and second in its versatility. You only need a handful of ingredients—garlic, butter, soy sauce, and your choice of pasta (I usually go for linguine or spaghetti). Freshly sliced green onions add just the right amount of freshness. But that’s just the base. From here, you can take the recipe in any direction you like. Want a bit of heat? Add some chili crisp or sriracha. Looking for a citrusy zing? Swap the soy sauce for ponzu. One of my favorite ways to elevate the flavors is with a drizzle of rice vinegar on top. The acidity cuts through the richness of the butter and perfectly balances the umami of the soy sauce.
Don’t be afraid to throw in some vegetables, either! Sautéed mushrooms, broccoli, or even snap peas would make excellent additions. You can truly make this recipe your own by adjusting it to your preferences or whatever you have in the fridge.
