Extra Saucy Chicken Lazone (New Orleans, LA, USA)
Juicy chicken, garlic, chili powder, pasta and lots of cream. You can't go wrong here! Try this extra saucy take on a dish named after an executive chef from New Orleans's own Brennan's restaurant.

Ingredients
- 1 Lb Pasta Linguini, fettuccini, spaghetti or bowtie
- 1 1/2 Lbs Chicken Breast Roughly 4 Small or 2 Large
- 1/2 Stick Butter
- 3 C Cream Heavy is preferred, but half n half works
- 1/2 Tbsp Salt
- 2 Tbsp Chili Powder
- 2 Tbsp Onion Powder
- 3 Tbsp Garlic Powder
- Salt and Pepper to Taste
Instructions
- Melt the butter in a large skillet over medium high heat. Cut the chicken into one piece per person.1/2 Stick Butter, 1 1/2 Lbs Chicken Breast
- Mix the salt, chili powder, garlic powder and onion powder together. Lightly coat the chicken in this spice mixture, reserving the leftover mixture for later.1/2 Tbsp Salt, 2 Tbsp Chili Powder, 2 Tbsp Onion Powder, 3 Tbsp Garlic Powder
- Add the chicken to the skillet and cook 5 minutes on each side, turning once. This will start to create a spice "crust" on the chicken. Start boiling water for the pasta while the chicken cooks
- Once the chicken is cooked the initial ten minutes, add the remaining spice mixture and the cream to the pan. Cover and simmer for at least ten minutes to let everything meld together.3 C Cream
- While the chicken simmers, drop your pasta in the boiling water (make sure to salt it) and cook per the directions.1 Lb Pasta
- When the pasta is cooked, strain it and return it to the pot. Turn off the heat.
- Test the cream sauce for salt and pepper. Mix about a half cup of the sauce with the pasta to help keep it from sticking together.Salt and Pepper to Taste
- I like to serve the chicken pieces whole so there is no risk of rubbing the spice "crust" onto a cutting board. If you prefer to slice it, do that now.
- Serve the chicken on top of the pasta. Ladle the cream sauce over the dish. This dish is great with a side of sautéed vegetables like broccoli or spinach. Mushrooms also pair well. I recommend setting aside some time for a nap after this one.
Notes
This dish gets as close as possible to the original spirit of Chicken Lazone, while adding extra sauce and pasta. That being said, there are a number of ways you can dress it up. Try using fresh, sautéed garlic and onion in place of powdered. Add some cayenne powder for extra spice. Maybe even stir in some mushrooms or fresh spinach. There are countless ways to add your own flair.
Brennan’s has been an icon of New Orleans since 1946. They are credited with the creation of Bananas Foster and are famous for their Breakfast at Brennan’s.
