Spam, Egg, and Cheese Breakfast Tacos

Easy Spam, egg, and cheese breakfast tacos with onions and a side of Ketchup. A quick Hawaiian-Tex-Mex fusion breakfast.

Ingredients
  

  • 6 Oz. Spam or Canned Luncheon Meat, Diced Small
  • 4 Eggs
  • 4 Flour Tortillas 6-7 Inches
  • 1/2 C Grated Cheddar Cheese Roughly 2 Oz.
  • 1/4 Small White or Yellow Onion, Diced Roughly 1/4 C (Optional)
  • 1-2 Green Onions, Sliced (Optional)
  • Black Pepper to Taste
  • Ketchup and Sriracha for Serving

Instructions
 

  • Heat a skillet over medium heat and add the Spam. Spread it out evenly across the pan and sauté for 5-7 minutes. Only stir even 1-2 minutes to give the meat time to crisp up on each side.
    6 Oz. Spam or Canned Luncheon Meat, Diced Small
  • Add the (optional) diced white or yellow onion and sauté another 2-3 minutes until soft.
    1/4 Small White or Yellow Onion, Diced
  • While this sautés, you can heat your tortillas in a second pan. Just warm them through. Roughly 30 seconds per side.
    4 Flour Tortillas
  • Beat the eggs in a bowl with a fork. Add a pinch of pepper, plus more to taste.
    4 Eggs, Black Pepper to Taste
  • Reduce the heat on the meat and onions to low and add the eggs. Scramble to your liking.
  • Cut the heat about a minute before the eggs are done and fold in the grated cheese.
    1/2 C Grated Cheddar Cheese
  • Fill each tortilla with an equal amount of the scrambled egg mixture and top with the (optional) green onions.
    1-2 Green Onions, Sliced
  • Serve hot with sides of ketchup and sriracha.
