While that heats up, mix the ketchup, mayo and hot sauce in a small bowl. Add additional hot sauce to taste.
1/4 C Mayonnaise, 1/4 C Ketchup, 1 tsp Hot Sauce
Lay out the bread slices on a baking sheet and spread the top side of each slice evenly with the ketchup/mayo mix.
8 Slices Texas Toast, Sourdough, Wheat or Any Other Bread
Top each slice of bread with a slice of cheese. Additionally top half of the slices with the sliced tomato and 3-4 pinches of the lemon pepper. Note: Stacking tomatoes on top of each other will endanger the integrity of the sandwich. Do your best to only have a single layer of tomato. 8 Slices Cheddar, Swiss or Gouda Cheese, 1 Small Tomato (Like a Roma), 1 1/2 Tbsp Lemon Pepper (with Salt)
Add the bread slices to the hot broiler or toaster oven. You can cook in batches if you need to, and cooking times will vary based on taste and temperature of your appliance. The goal is to melt the cheese and toast the bread. For me, that is 1-2 minutes in the broiler or 5 in the toaster oven. Note: Watch the broiler closely because things can burn quickly. Once toasted and melted to your liking, remove the bread and set aside.
Heat the oil in a skillet over medium-high heat.
2 Tbsp Oil
Once the skillet is nice and hot, begin frying the eggs in batches. Fry them to your liking, flipping at least once. Season each side of the eggs with 3-4 pinches of lemon pepper.

Build the sandwiches with one of the tomato bread slices, tomato side up, two of the fried eggs and one of the cheese-only bread slices, cheese side down.
Serve right away with some coffee … or maybe a Bloody Mary.
