Huevos con Salchicha (Eggs with Hot Dogs)

Ingredients
  

  • 1 Hot Dog
  • 2 Eggs
  • 1 Tbsp Vegetable Oil, Corn Oil or Butter
  • Salt and Pepper to Taste

Instructions
 

  • Add the oil/butter to a nonstick pan over medium-high heat.

  • While the oil/butter heats up, slice your hot dog into rounds. I like 1/4 inch thickness, but this comes down to personal preference.

  • Add the rounds to the pan and cook for 3 minutes, flipping once or twice. The idea is to crisp up both sides of the hot dog rounds.
    Note: If you choose to add extra ingredients beyond this recipe (see recipe notes below), add them with the hot dogs.
  • When the hot dogs have some color on them, reduce the heat to medium, remove the pan from the heat and add your eggs in, straight from the shell. Make sure to remove any shell pieces that may fall in.
  • Break the eggs up with your cooking spoon or tongs. Give them a little stir to combine the whites and yolks, and to mix the hot dog rounds in. Then return the pan to the heat.
    Note: if you are making multiple servings, consider whisking the eggs in a separate bowl before adding to the hot pan. You can do this while the hot dogs cook, which will save time and keep the pan from cooling down too much.

  • Let the eggs cook, stirring occasionally, until they reach your desired doneness. This should really only take 1-2 minutes, but could take longer depending on how many servings you are cooking.
  • Taste the eggs for salt and pepper and serve right away! Enjoy with tortillas, salsa and really anything else that is good at breakfast.

Notes

Stuff to add with the hot dogs: bell pepper, jalapeño, onion, tomato, ham or other meat, pre-cooked potatoes
You can also mix cheese in just as the eggs are finishing cooking
Toppings: salsa, hot sauce, diced onion, ketchup
