Equipment

  • Normal Kitchen Utensils

Ingredients

  • 3 C Chicken Broth, Vegetable Broth or Water
  • 2 C Grated Cheddar Cheese, Or Your Favorite Cheese 8 Oz.
  • 3/4 C *Quick* Grits
  • 2 Tbsp Butter or Cream plus more to taste
  • Salt and Pepper to Taste

Instructions

  • Bring your broth/water to a boil in a pot over high heat. Tip: if you cover the pot, it will come to a boil faster.
3 C Chicken Broth, Vegetable Broth or Water
  • Once boiling, add your grits and reduce the heat to medium. Cover and cook 5-7 minutes, stirring occasionally to prevent clumping, until the grits have softened and thickened to your liking.
    3/4 C *Quick* Grits
  • Reduce the heat to low. Set a handful of the cheese aside for garnish. Stir the rest of the cheese into the grits, along with the butter/cream.
2 C Grated Cheddar Cheese, Or Your Favorite Cheese, 2 Tbsp Butter or Cream
  • Stir until the cheese has melted into the grits and then cut the heat off. Taste for salt and pepper.
If you want to make the grits thinner, you can add a few more Tbsp of broth/water. You can also make them more luxurious by adding some more butter or cream instead.
You can also thicken the grits by cooking a little longer.
    Salt and Pepper to Taste
  • Serve the grits hot, topped with the reserved cheese and maybe a little more butter and black pepper.

Notes

This dish, while simple, is also very customizable - starting with your choice of cheese. Great options include cheddar, Monterey Jack and pepper jack.
You could also top the grits with green onions, bacon and/or sliced jalapeƱos.
The ultimate topping is, of course, shrimp.
