Equipment

  • Normal Kitchen Utensils

Ingredients

  • 1 Lb Dry Spaghetti
  • 1 Lb Your Favorite Hot Dogs Usually 8-10
  • 1/4 C Grated Parmesan Cheese (Optional) Plus More For Garnish
  • 2 Tbsp Butter
  • Salt and Pepper to Taste
  • For the Sauce See Notes for a simpler version
  • 28-29 Oz. Canned Tomato Sauce Roughly 3 1/4 C
  • 1 Medium Yellow Onion Finely Diced
  • 1/4 C Olive Oil
  • 5-6 Cloves Garlic Minced
  • 1 Tbsp Dried Oregano
  • 1 tsp Dried Basil Or More Oregano
  • 1/4 tsp Red Pepper Flakes (Optional)

Instructions

  • Slice the hot dogs into 1/4 inch thick rounds. Cook them in a sauce pot on medium-high heat, with a few Tbsp of the olive oil, for 2-3 minutes.
1 Lb Your Favorite Hot Dogs, 1/4 C Olive Oil
  • When the hot dog slices are starting to get some color, stir in the diced onion and a heavy pinch of salt and pepper. Cook another 2-3 minutes until the onions are translucent.
1 Medium Yellow Onion, Salt and Pepper to Taste
  • Add the garlic, oregano, basil and (optional) red pepper flakes, and cook another minute.
5-6 Cloves Garlic, 1 Tbsp Dried Oregano, 1/4 tsp Red Pepper Flakes, 1 tsp Dried Basil
  • Add the remaining olive oil and the tomato sauce. Reduce the heat to a simmer and cover. Cook 20 minutes, stirring occasionally.
    28-29 Oz. Canned Tomato Sauce
  • While the sauce cooks, fill a large pot with enough water to cook your spaghetti and heat it to boiling. When boiling, add a few Tbsp of salt and drop in the spaghetti. Reduce the heat to medium and cook the pasta to al dente per the package instructions.
    1 Lb Dry Spaghetti
  • When the pasta is cooked, reserve 1/2 C of the pasta water (just in case) and drain the pasta. Return the to pot and stir in the butter (cut off the heat).
    2 Tbsp Butter
  • When the sauce has finished cooking, turn off the heat and stir in the parmesan cheese.
When the parmesan is stirred in, check for thickness. You can thin the sauce out using the reserved pasta water, or thicken the sauce by cooking it, uncovered, for a few more minutes.
    1/4 C Grated Parmesan Cheese
  • Test the sauce for seasoning, adding salt and pepper as desired.
  • Mix the sauce into the buttered spaghetti and serve hot, right away, topped with extra parmesan cheese. It goes great with garlic bread and a salad.

Notes

Note: here's an easy sauce substitute. Sub out all of the sauce ingredients - except a few Tbsp of the olive oil - for 5-6 cups of store-bought spaghetti sauce. Add it in when you would add the tomato sauce.
