Xnipec (Yucatan Peninsula, Mexico)

Ingredients
  

  • 3 Large Roma Tomatoes Seeded and Diced
  • 1/4 Medium Red Onion Diced
  • 2 Or More Habanero Peppers
  • 3 Tbsp Sour Orange Juice Sub 2 Tbsp Lime Juice and 1 Tbsp Orange Juice
  • 1 Handful Cilantro Chopped
  • Salt to Taste

Instructions
 

  • Add the tomato, onion, cilantro and sour orange juice to a bowl.
    3 Large Roma Tomatoes, 1/4 Medium Red Onion, 1 Handful Cilantro, 3 Tbsp Sour Orange Juice
  • *Carefully* cut the habaneros in half, lengthwise. Remove the seeds and cut the halves into quarters, lengthwise. Chiffonade the quarters into fine ribbons. Add to the bowl with everything else.
    Note: habaneros are hot and will burn sensitive skin, cuts, eyes, etc. Some people wear gloves when working with them. At the very least, be sure to wash your hands well with soap and water after handling them.
    2 Or More Habanero Peppers
  • Add a heavy pinch of salt to the mix and stir until everything is combined.
    Salt to Taste
  • You can taste for more salt and serve immediately, but I recommend letting the salsa chill in the fridge for at least a half hour. When chilled, taste for more salt before serving.
