Two-Ingredient Queso

Every Texan probably already knows this recipe, but why not share it with the world? This is arguably the easiest way to make queso: it only takes two ingredients and 10 minutes!

Equipment

  • 1 Sauce Pot or Microwave Safe Bowl
  • Normal Kitchen Utensils

Ingredients
  

  • 16 Oz. Processed American-Style Cheese Such as Velveeta or Easy Melt
  • 1 10 Oz. Can Diced Tomatoes with Chiles Such as Ro*Tel

Instructions
 

  • Dice the cheese into 1-inch cubes.
    16 Oz. Processed American-Style Cheese
  • If microwaving, add the cheese and tomatoes (including juice) to a microwave safe bowl. Microwave 2.5 minutes on high, stir, and microwave another 2.5 minutes – or until the cheese is melted through.
    1 10 Oz. Can Diced Tomatoes with Chiles
  • If cooking on the stovetop, add the cheese and tomatoes to a sauce pot and cook over medium heat, stirring occasionally, until the cheese is melted through.

  • Serve with chips, in a burrito or smothered over pretty much anything.

Notes

Queso is perfect on its own but can also be amped up with extra ingredients. Try adding some sautéed onions and peppers, or taco meat to the mix; or topping it with a scoop of guacamole or pico de gallo.  
If you like a thinner queso, consider adding a little milk while cooking. Add 1 Tbsp at a time until you get the consistency you like. If you can’t find the canned tomatoes and chiles, try subbing in your favorite salsa.
