Equipment

  • 1 Baking Sheet Preferably Lined with Foil
  • 1 Wire Baking Rack (Optional) but Recommended
  • 1 Basting Brush
  • Normal Kitchen Utensils

Ingredients

  • 6 Chicken Drumsticks Skin On if Possible
  • 1/2 C Barbecue Sauce Pick your favorite, and aim for one with a ketchup consistency
  • 1 1/2 tsp Baking Powder NOT Baking Soda; Baking powder changes the pH of the chicken skin, helping it crisp up in the oven
  • 1 tsp Salt Plus More To Taste
  • 1 tsp Garlic Powder
  • 1/2 tsp Ground Black Pepper
  • 1/2 tsp Paprika Preferably Smoked
  • Vegetable Oil for Greasing (Optional)

Instructions

  • (Optional): You can prep the chicken up to an hour in advance, and let it sit, uncovered in the refrigerator, to help the skin dry out even more. Dry Skin = Crispy Skin
If you do this, skip the next step until the hour is up.
  • Preheat your oven to 400 degrees F.
  • To prep the chicken, dry it thoroughly with paper towels.
    6 Chicken Drumsticks
  • Mix the baking powder, salt, pepper, garlic powder and paprika together. Coat the chicken thoroughly with this mixture.
1 1/2 tsp Baking Powder, 1 tsp Salt, 1/2 tsp Ground Black Pepper, 1 tsp Garlic Powder, 1/2 tsp Paprika
  • If using a wire rack, place it on top of a baking sheet and place the drumsticks on top of it. (I also like to line the baking sheet with foil before adding the wire rack (helps with cleanup.)
If not using a wire rack, line a baking sheet with foil and add just enough oil to help keep the chicken from sticking. Then place the chicken on the foil.
Be sure to disperse the drumsticks evenly and not let them touch. Place them skin-side-up to start.
    Vegetable Oil for Greasing
  • This is when you would (optionally) let the chicken sit, uncovered, in the refrigerator for up to one hour.
After resting, preheat your oven to 400 degrees F.
  • Bake the drumsticks for 35-40 minutes, depending on size of the drumsticks, flipping once halfway. If you have it, use the convection setting on your oven.
  • Once the chicken is baked, remove it from the oven and set the oven to broil.
  • Baste the chicken generously with the barbecue sauce, being sure to get both sides. This will be the first of two coats.
    1/2 C Barbecue Sauce
  • Return the chicken to the oven and broil for 3-5 minutes, until the barbecue sauce gets some caramelization to it.
  • Remove the drumsticks from the oven (you can turn it off at this point) and baste them a final time with the remainder of the barbecue sauce.
Note: make sure your chicken is cooked to an internal temperature of 165 degrees F.
  • Let the chicken rest for 5 minutes before serving with your favorite barbecue sides!

Sink Into Some Baked BBQ Chicken Drumsticks

Nothing beats the cozy, smoky-sweet flavors of barbecue, especially when you can whip it up in your oven! These baked BBQ chicken drumsticks bring all the sticky, juicy goodness of traditional BBQ, but without the need to haul out your grill or deal with unpredictable weather. When it’s cold, rainy, or you’re just not feeling like firing up the grill, this recipe has your back. It’s warm, comforting, and full of flavor – perfect for weeknight dinners or even small gatherings.

Why This Recipe Works

You might wonder why I used baking powder for these baked BBQ drumsticks. Here’s the trick: the baking powder changes the pH of the chicken skin, which helps it brown more evenly and become super crispy in the oven. It also helps draw out moisture, leaving you with crunchy, golden skin – no deep fryer needed! Toss in some pantry spices – salt, pepper, garlic powder, and paprika – and you’ve got yourself a solid seasoning base that makes these drumsticks taste like they spent hours on a smoker.

Chicken drumsticks are also one of the cheapest cuts of meat you can find these days. They’re budget-friendly and versatile, and they soak up that sticky BBQ sauce like champs. Whether you’re feeding a hungry family or meal prepping for the week, these drumsticks won’t let you down.

A Little History on BBQ Chicken

Let’s take a quick stroll down memory lane. While it’s hard to pinpoint the exact year someone first slathered BBQ sauce on chicken, we know BBQ itself has deep roots in the American South. The slow-cooked, smoky style took hold in the early 1900s, becoming a beloved tradition across the country. BBQ chicken itself became a backyard staple in the 1950s, especially once charcoal grilling became popular. But when the weather or time isn’t right for grilling, baked versions like this one stepped in to save the day.

Pairings and Variations

If you want to take this meal up a notch, serve these drumsticks with my homemade ranch dressing for dipping – creamy, cool, and a perfect contrast to the sticky BBQ sauce. Or, if you’re in the mood for something a bit tropical, skip the potato salad and make a batch of Hawaiian mac salad instead. The creamy pasta salad brings a refreshing, beachy vibe that pairs so well with the smoky-sweet chicken.

So next time you’re craving BBQ but don’t want to fuss with the grill, give these baked BBQ chicken drumsticks a try. They’re easy, tasty, and guaranteed to become a family favorite. Let me know if you end up serving them with ranch or if you go full tropical with that mac salad – I’d love to hear how you’re making this recipe your own!
